5.油锅烧热,加入姜片爆香

6.将鲶鱼放入油锅中,慢慢煎至断生且一面稍稍金黄

7.一面煎好后轻轻翻至另一面继续小火煎两分钟

8.倒入两碗清水,稍稍没过鱼肉即可(喜欢多喝汤的可多加点水)

9.水差不多是这个位置就好了

10.盖好锅盖,大火煮沸后转小火继续煮十分钟至鱼汤变成奶白色

11.十分钟后,打开锅盖,用锅铲轻轻贴着锅底推一下,以免鱼肉粘锅,并用锅铲撇去上层的油脂

15.继续大火煮三分钟

小窍门&温馨提示
1、鲶鱼提前用姜片和料酒腌制片刻,可起到去腥的作用;
2、煮鱼汤的过程会出现少许的油脂,可用汤勺撇去,这样煮出来的鱼汤就不会太油腻;
3、豆腐选用嫩豆腐,口感会更加嫩滑哦;
4、鲶鱼易熟,时间不宜炖煮太久,以免煮烂影响口感。
